French Toast Bites

We realize this is essentially just chopped up French toast, but there’s something about these French Toast Bites that reigns supreme in our minds.

Ingredients

5 or 6 1-inch thick slices of vegan, artisan-style bread

1 ¼ cups Califia Farms Extra Creamy Oatmilk

3 tablespoons flaxseed meal

¼ teaspoon cinnamon

1 teaspoon vanilla extract

Vegan whipped cream

Fresh fruit of choice

Maple syrup

To a large bowl, add Califia Farms Extra Creamy Oatmilk, flaxseed meal, cinnamon, and vanilla. Whisk together until well combined. Set mixture aside for about 10 minutes to thicken.

Remove the crust from each slice of bread, if desired, and slice into 1-inch cubes.

Set a skillet over medium heat and grease with vegan butter or cooking spray.

Whisk the batter again, then, working in batches, add a handful of the cubed bread into the bowl. Quickly toss the cubes so they are evenly coated but not soaked. Shake off the excess batter, then transfer to the hot pan.

Cook the cubes in the skillet until all sides are golden brown, then transfer to a plate. Repeat the same process for the remaining cubes of bread. Note: the cubes may stick a little when cooking, so flip them carefully.

Serve right away with vegan whipped cream, fresh fruit, and maple syrup.
