Spinach Artichoke Pizza

Ingredients
Pizza dough of your choice
1 cup cashews
3 garlic cloves
3 sprigs thyme
1 teaspoon chili powder
¾ cup nutritional yeast
Salt and pepper
1 cup Califia Farms Zero Sugar Oatmilk
1 ½ cups spinach, plus additional for topping
2 cups vegan mozzarella “cheese”
1 14-ounce can quartered artichoke hearts
Cilantro, for garnish
Red pepper, optional
Directions

Preheat oven to 425ºF. Soak cashews in water for 20 minutes.

Drain the water and add garlic, thyme, chili powder, nutritional yeast, salt and pepper, and Califia Farms Oat + Almond . Blend all in a blender or food processor until smooth.

Add sauce to a saucepan and warm over medium low heat.

Add ½ cup of vegan mozzarella "cheese" and spinach and cook until spinach has wilted completely (about 5-7 minutes). Stir occasionally to ensure that the sauce does not burn.

Roll out pizza dough into desired shape. Place on a parchment lined baking sheet and spoon sauce all over the dough, leaving about ½ inch of the perimeter bare (this will form the crust).

Top with additional mozzarella "cheese," plus artichokes and a few more spinach leaves.

Bake for 20-25 minutes, or until the crust is golden brown and the cheese has melted.

Finely chop cilantro and garnish on top of the pizza. Add red pepper if desired.
