Pumpkin Vodka Pasta

You just can’t celebrate fall without a pumpkin-themed pasta! This creamy pumpkin pasta sauce is made in one skillet and comes together in no time.

Ingredients

8 ounce pasta of choice, we used penne

2 tablespoons extra-virgin olive oil 

2 garlic cloves, thinly sliced 

1 medium sized shallot, thinly sliced  

Kosher salt and pepper to taste  

1 cup canned pumpkin puree 

2 tablespoons vodka 

2 sage leaves, plus more for garnish 

1/4 cup Califia Farms Zero Sugar Oatmilk 

1/4 cup pasta water, adjust with more if needed

Bring a large pot of water to a boil for the pasta. When boiling, add kosher salt and boil pasta according to the package instructions.

While the pasta is cooking, make the sauce. In a large skillet, heat the extra-virgin olive oil over medium heat. Add garlic and shallot and sauté until translucent, about 2 to 3 minutes. Season with kosher salt and pepper. Stir in the canned pumpkin puree and let it cook down for 2 to 3 minutes.

Pour in the vodka and let it simmer for 2 minutes, allowing the alcohol to reduce. Then add in sage leaves and Califia Farms Zero Sugar Oatmilk. Mix well to combine.

Add the cooked pasta to the skillet with the sauce. Toss the pasta in the sauce until it's well-coated and heated through. Adjust with extra pasta water if needed to help get a glossy sauce! Serve and top with fresh sage for garnish.
