Lemon Loaf
This Lemon Loaf is full of zesty flavor and makes the easiest breakfast on-the-go – pair with your favorite Califia Farms coffee and start the day right!

Ingredients
For the cake:
2 cups all purpose flour
⅔ cup + 1 tablespoon granulated sugar
¾ teaspoon kosher salt
2 ¾ teaspoons baking powder
¾ cup Califia Farms Extra Creamy Almondmilk, room temp
⅓ cup melted coconut oil
3 tablespoons vegan yogurt
¼ cup lemon juice
Zest of two lemons
2 teaspoons vanilla extract
For the glaze:
1 cup powdered sugar
1 ½ tablespoons lemon juice, plus a bit extra as needed

Heat oven to 350°F. Lightly grease a standard loaf pan and line with a strip of parchment paper, allowing it to hang over the edges.

To a large bowl, add the flour, sugar, salt, and baking powder, and whisk well to combine. To another medium-sized bowl, add the Extra Creamy Almondmilk, coconut oil, vegan yogurt, lemon juice, lemon zest, and vanilla extract, and whisk to combine.

Add the wet ingredients to the bowl of dry ingredients, and gently mix until just combined. Pour the batter into the prepared pan, place into the oven, and bake for 35-40 minutes or until cooked through. Allow the loaf to cool for 10 minutes before removing from the pan to cool completely.

For the glaze, whisk the lemon juice and powdered sugar together until smooth. Add additional juice as needed to create a pourable glaze. Once the loaf has completely cooled, drizzle the glaze over the top.
