Lemon Blueberry Muffins

Ingredients

For the muffins:
1 cup sugar
¼ cup vegetable oil
1 cup Califia Farms Extra Creamy Oatmilk
3 teaspoons vanilla extract
1 teaspoon lemon extract
¼ cup lemon juice
2 tablespoons lemon zest
2 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
2 cups blueberries
Turbinado sugar, for sprinkling (optional)

For the glaze:
1 ¾ cups powdered sugar
¼ cup Califia Farms Extra Creamy Oatmilk
2 tablespoons lemon juice

Directions

Preheat oven to 350ºF. In a large bowl, whisk together sugar, vegetable oil, Califia Farms Extra Creamy Oatmilk, vanilla extract, and lemon extract. Then, add lemon juice and lemon zest.

In a separate bowl, whisk together flour, baking powder, baking soda, and kosher salt. Add these dry ingredients to the wet ingredients and mix until just combined. Fold in the blueberries.

Line a 12-cup muffin pan with liners and spray the top of the pan with oil (this prevents the tops of the muffins from sticking to the pan). Fill each cup to the top with batter. Sprinkle each muffin with turbinado sugar and bake for 25 minutes, or until an inserted toothpick comes out clean.

Allow muffins to cool completely. Make the glaze by mixing powdered sugar, Califia Farms Extra Cremay Oatmilk, and lemon juice together. Whisk until a smooth glaze forms.

Drizzle glaze on top of muffins, serve, and enjoy!
