Fourth of July Cupcakes
We’re seeing red, white, and blue! These flag cupcakes are a must-have for 4th of July parties.

Ingredients
For the cupcakes:
110 grams all-purpose flour
60 grams white sugar
1/4 teaspoon baking soda
Pinch of baking powder
Pinch of salt
1/2 cup Califia Farms Extra Creamy Oatmilk
1/2 tablespoon white vinegar
40 milliliters neutral oil
1 teaspoon vanilla extract
For the frosting:
1/2 cup vegan butter
1 1/2 cups sifted powdered sugar
1/2 teaspoon vanilla extract
Food coloring (purple, blue, and red)
White star sprinkles, optional

Preheat oven to 350°F. Combine sifted all-purpose flour, sugar, baking soda, baking powder, and salt.

In a separate bowl, whisk together 1/2 cup Califia Farms Extra Creamy Oatmilk and white vinegar, then set it aside for 5 minutes. Then, add neutral oil and vanilla extract.

Add the wet ingredients to the dry ingredients and mix until just combined. Scoop the batter into a muffin pan lined with cupcake liners. Bake for 20-25 minutes depending on your oven.

Make the frosting. Using a handheld mixer, cream vegan butter, then add sifted powdered sugar and vanilla extract. Separate the frosting into 3 bowls. For the white frosting, mix in a small amount of purple food coloring. Add blue food coloring for the blue frosting and a mix of red food coloring for the red frosting.

Once the cupcakes have cooled, pipe the frosting onto the cupcakes to resemble the flag and add white star shaped sprinkles for the stars. Serve and enjoy!
