Crispy Brussels Sprouts

We’re not going to pretend vegetables taste the same as potato chips, but we have a feeling these Crispy Brussels Sprouts will have you eating more vegetables than you thought possible (mainly due to the herby dill dip they’re paired with.)

Ingredients

1 pound brussels sprouts 

2 tablespoons olive oil 

Drizzle of balsamic vinegar (optional) 

½ cup vegan mayo 

2-3 tablespoons Califia Farms Organic Almondmilk

1 teaspoon lemon juice

Small bundle of dill, minced 

Salt and pepper to taste

Preheat oven to 400ºF. Cut brussels sprouts in half and place on a baking sheet with parchment paper with olive oil, salt and pepper, tossing everything together.

Roast for 25-30 minutes, until crispy throughout. Halfway through, add a drizzle of balsamic vinegar if desired.

While brussels sprouts are roasting, make the dill dip. In a bowl, add in vegan mayo, Organic Almondmilk, lemon juice, dill, salt, and pepper. Mix until combined.

Serve brussels sprouts alongside dip and enjoy!
